This sauce is a great addition to Mexican food, such as smothered on top of cooked burritos or nachos, or served as a hot dip for nacho chips.
TIPS: this recipe makes a lot of sauce so I will cut it in half if just feeding 2 or 3 people. It is basically made like any béchamel sauce, but adding Mexican flavors.
Green Chili Sour Cream Sauce
Ingredients
- 2 Tbsp olive oil
- 1 Tbsp butter
- 3 Tbsp all purpose flour
- 2 C low sodium chicken broth
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 C sour cream
- 1/2 of a 4 oz can chopped green chilies (2 oz)
- 1/2 C shredded sharp cheddar cheese
- 1-2 dashes hot sauce to taste
Instructions
- Melt butter and olive oil in medium saucepan over medium heat. Whisk in flour and cook stirring constantly for 2 minutes. Slowly whisk in chicken broth and whisk, cooking until thickened, about about 3 minutes. Whisk in spices. Remove from heat and stir in green chilies, and cheddar cheese until cheese is melted. Stir in sour cream, and add hot sauce to taste. Also add more salt to taste if needed.
- Pour over your favorite burritos, or use as a hot dip for nacho chips.
