This is a quick and simple quiche to make and tastes great. Because it’s crustless it is perfect for a low carb breakfast or dinner. As in any quiche, you can play around with the ingredients to create the flavors you like. For example you could use a different flavor of cheese, or add a breakfast meat such as ham, bacon or cooked crumbled sausage. Or you could add some small diced red peppers to the onions when sautéing them, for example.
TIPS: A glass pie dish will give you a browner, crunchier crust. Before removing from the oven, you want the middle to be just set, but still a tiny bit jiggly when you shake the pie dish in the oven. It will finish cooking in the center and firm up as it rests.
Crustless Broccoli Cheddar Quiche
Ingredients
- 2 Tbsp olive oil
- 1 C onion diced small
- 2 small garlic cloves minced
- 1 1/2 C broccoli florets chopped small
- 6 large eggs
- 3/4 C milk
- 1/4 C sour cream
- 1/2 tsp kosher salt
- 1/4 tsp pepper
- 1 1/2 C shredded sharp cheddar cheese
- 3/4 C diced ham or bacon (optional)
Instructions
- Preheat oven to 375 degrees. Coat a 9 inch pie plate with cooking spray.
- Place broccoli florets in microwave safe bowl with 1 Tbsp water. Cover and microwave about 2 to 3 minutes, until broccoli is partially cooked through and can pierce with a fork but is still firm. Drain.
- Heat oil over medium heat in a skillet. Add onion and cook, stirring , until softens, about 4 minutes. Add minced garlic and cook for about 30 seconds, until garlic is fragrant. Remove from heat. Stir in broccoli florets and diced meat (if using).
- Whisk eggs, milk, sour cream, salt and pepper together in a separate bowl. Fold in the broccoli mixture and the cheese. Spoon into the prepared pie pan.
- Bake until middle is just set, and it's a golden color, about 25-30 minutes. Let stand at least 10 minutes before serving.
