If you love chocolate chip cookies this is a great alternative to baking individual cookies. This creates something like a chocolate chip cookie pie that you can slice like pie and serve warm, preferably topped with vanilla ice cream and to be even more decadent, top with fudge sauce. All ages young and old love this dessert. Alternatively you can make 4 individual skillet cookies in smaller cast iron skillets where each person gets their own, and can eat it right out of the skillet.
TIPS: Smooth the top before baking so the cookie is even. You can substitute dark or other chocolate chips as desired. This is best served warm, so if you bake it ahead of time, stick the skillet back in the oven for a few minutes to warm it up prior to serving.
Giant Chocolate Chip Cookie in Cast Iron Skillet
Ingredients
- 1 C brown sugar lightly packed
- 1/2 C white sugar
- 1/2 C butter softened
- 1 large egg room temperature
- 3 Tbsp milk preferably whole
- 1 1/2 tsp vanilla
- 2 C all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 C semi sweet chocolate chips divided
Instructions
- Preheat oven to 325 degrees. Lightly coat a 10-inch cast iron skillet with cooking spray. (Alternatively use 4 individual 6-inch cast iron skillets).
- Beat brown sugar, white sugar and butter with an electric handle beater until light and fluffy. Add egg, milk and vanilla and beat until blended. In a seperate bowl whisk together flour, baking soda and salt. Add to wet mixture gradually beating at low speed until combined. Mix in 1 cup of chocolate chips.
- Spread mixture evenly into the cast iron skillet(s) and top with remaining chocolate chips. Bake in preheated oven for about 45 minutes, until golden brown and center is just cooked through. (If using smaller individual skillets, bake 20-25 minutes). Remove from oven and let rest for 15 minutes before slicing and eating.
