This is a greek dish of warm spiced chicken served with tzatziki sauce on a warm pita bread. It’s delicious served alone, or with a side of greek salad. Don’t let the array of spices turn you off as it’s a delicious combination on the grilled chicken. Top with your choice of lettuce, onions or tomato.
Chicken Gyros
Ingredients
- 2 lbs boneless skinless chicken thighs
- 1/2 C plain greek yogurt
- 2 Tbsp lemon juice
- 2 Tbsp olive oil
- 4 garlic cloves minced
- 1 1/2 tsp cumin
- 1 Tbsp dried oregano
- 1 Tbsp smoked paprika
- 1/4 tsp cinnamon
- 1 tsp each salt and pepper
- pita bread
- tzatziki sauce store bought or homemade (see recipe on this website)
- shredded lettuce (optional)
- small diced tomatoes (optional)
- small diced red onion (optional)
Instructions
- Mix all of the ingredients except the chicken in a large bowl or rectangular baking dish. Add the raw chicken, toss to coat, and marinade, covered in the refrigerator , for at least 1 hour, up to 4 hours.
- Grill the chicken thighs until charred on both sides and internal temperature is 165-175 degrees. Place on a cutting board and chop/shred the chicken into pieces.
- Wrap the pita bread in a damp kitchen towel. Place in microwave and heat for 30 seconds until warm and pliable.
- Assemble the gyros : Fold a pita in half and put some tzatziki sauce on the bottom. Fill it with chicken then top with more tzatziki sauce. Top with preferred toppings of lettuce, diced tomatoes and/or diced onions.
