These cookies were my Nanny’s favorite cookie and I got this recipe from her. These cookies are soft and chewy with the perfect amount of buttery oatmeal and coconut flavor. Even if you are not a big coconut fan, you will love these cookies. They are always a hit with kids and adults alike.
TIPS: Lining the cookie sheet with parchment or silicone baking sheets will make removing the cookies much easier. Do not overbake or they will end up too crispy.
Nanny’s Cookies (Oatmeal Crunchy Crisps)
Ingredients
- 1 C butter softened
- 1 1/2 C brown sugar
- 1 1/2 C flour
- 1 tsp cream of tarter
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1 1/4 C oatmeal
- 1 C coconut
Instructions
- Preheat oven to 375 degrees. Line cookie sheets with parchment paper.
- Cream together butter and sugar in a large bowl until smooth. Beat in the egg.
- Sift together flour, cream of tarter, baking soda and salt. Stir in flour mixture into the wet mixture until combined. Stir in coconut and oatmeal.
- Roll dough into small balls using your hands. Place balls on baking sheet and press down slightly with a fork. Bake 11-12 minutes until edges start to brown. Remove from oven and let sit one minute on cookie sheet, then transfer cookies to a wire rack to cool.
