This is a great low carb option to replace regular rice. With enough seasonings, riced cauliflower can mimic regular rice. This recipe is made with ingredients similar to a traditional rice pilaf, with a little onion, garlic, thyme and broth.
TIPS: Do not thaw the frozen cauliflower first. It works just as well to cook from frozen. Also you can rice your own cauliflower if necessary. Just buy a fresh head of cauliflower, cut off the florets, and place in a food processor. Pulse until the cauliflower is the size of rice. You may need to add a bit more broth when cooking the fresh cauliflower to get it to be tender.
Cauliflower Rice Pilaf
Ingredients
- 1 Tbsp olive oil
- 12 oz bag frozen riced cauliflower
- 1/2 C finely diced onion
- 1 medium to large clove garlic minced
- 1/4 tsp dry thyme or 1/2 tsp fresh chopped thyme (optional)
- 1/3 C chicken stock
- salt and pepper
Instructions
- Heat oil or butter in non stick skillet over medium heat. Once hot, add the onion and sauté until it begins to get translucent, about 2-3 minutes. Add in the frozen cauliflower rice, garlic and thyme (if using), and sauté about 30 seconds until garlic is fragrant. Add in the broth, lower the heat to a simmer, and stir fry the cauliflower about 10 minutes, until the liquid is absorbed, the cauliflower is tender, and about 1/3 of the rice bits have started to brown.
- Remove from heat and season with salt and pepper to taste.
- Enjoy!
