This is a great sauce to have alongside Mexican dishes. I use it to dip taquitos in, dip tortilla chips in, or put in top of enchiladas or tacos instead of a traditional guacamole. You can make it as smooth or chunky as you wish depending on how you mash the avocados. I usually wait to make this not more than an 1-2 hours before serving, just to ensure the avocados color doesn’t turn dark. This recipe is from American Test Kitchen.

- 2 Tbsp fresh minced cilantro
Instructions
- Add all ingredients into a small bowl except cilantro and mash with a fork until almost smooth (a few chance are fine). Stir in the cilantro and a pinch of salt and pepper. Cover with plastic wrap until ready to serve.
