This is a great way to add flavor to just plain rice. It is not overly spicy but rather very flavorful. It goes great as a side dish with any meat, especially if having Mexican or Spanish dishes.
TIPS: Note this recipe requires pre-cooked white rice, so is a good way to use leftover rice. Otherwise, just make the rice ahead of time so its ready to mix into this recipe. Also this only makes enough for about 4 servings, so you may have to double the recipe if feeding a larger crowd.
Chile Cheese Rice
Ingredients
- 3 C cooked white rice
- 3/4 C sour cream
- 1/4 C minced scallions or chives
- 4 oz can chopped green chiles drained
- 1 C shredded cheddar or Mexican blend cheese
- 1/2 tsp salt or more to taste
- 1/8 tsp cayenne or more to taste
- Grated parmesan cheese
Instructions
- Preheat over to 450 degrees.
- Prepare a small baking dish (11×7 rectangle, 8×8 square or 1.5 to 2 Qt Oval) by greasing it with butter and sprinkling the bottom with a light coating of parmesan cheese.
- In a medium bowl, gently mix together the rice, sour cream, scallions, chiles, shredded cheese, salt and cayenne.
- Spread the mixture in the dish and smooth the top. Sprinkle with more parmesan cheese and dot with butter.
- Bake for 20 minutes, until the top and edges start to show a little light brown.
