This is the perfect accompaniment for any roast beef dish. At our house it is a must served on the side with slow roasted Prime Rib, but also works with a roasted whole Filet Minion, or a NY Strip roast. Occasionally we make it as a side just for grilled steaks, or use it on a roast beef or french dip sandwich.
TIPS: This can be made several hours ahead and kept refrigerated, covered, until needed. Also try to buy prepared horseradish (usually in a jar in the refrigerator section of the grocery stores’ deli section). You can use other jarred horseradish found in the condiments section of your store, and they work fine, but they are not quite as strong in flavor so you’ll need to use more. Stay away from anything called “horseradish sauce” as it is weak as it is made into a sauce already.
Ingredients:
1 1/2 C sour cream
3 Tbsp prepared horseradish (see tip above) – add more or less to taste
1/2 tsp hot pepper sauce (such as Franks or Texas Pete)
1/2 tsp worcestershire sauce
1 tsp lemon juice (or more to taste)
pinch salt and pepper
optional : 1 tsp dry tarragon or chives
Blend all ingredients together in a small bowl. Chill covered until ready to serve.
