Marry Me Chicken

There must be thousands of versions of Marry Me chicken on the internet, so this is just one that we tried and really loved. The creamy sun-dried tomato sauce is so tasty and packed with flavor that you just want to come back for more. Because this is a saucy chicken, it’s good served over something that works good with sauce, such as pasta or rice or mashed potatoes.

TIPS: This recipe call for thin chicken breast cutlets. You can make your own by slicing a thicker breast horizontally and pounding it to an even thickness. This recipe comes together fast so be sure to have all your ingredients measured and set out ahead of time.

Ingredients
  

  • 4 chicken breasts thin sliced, or halved horizontally and pounded thin
  • 2 Tbsp clarified butter or olive oil
  • salt and pepper
  • 1 Tbsp butter
  • 1/2 C sun-dried tomatoes in olive oil finely chopped
  • 1 Tbsp tomato paste
  • 2 cloves garlic minced
  • 1 C low sodium chicken stock
  • 1 tsp dry oregano
  • 3/4 tsp red pepper flakes
  • zest of 1 lemon
  • 1 C fresh spinach leaves
  • 6 chopped basil leaves
  • 1/2 C heavy cream
  • 1 Tbsp dijon mustard
  • 1/2 C Parmesan cheese

Instructions
 

  • In a large fry pan heat the clarified butter or olive oil over medium-high heat. Season the chicken breasts with salt and pepper. Saute chicken until golden brown on each side. Remove from pan and set aside.
  • In the same pan add butter, then sun-dried tomatoes, stirring for a minute. Add tomato paste, and cook for a minute to caramelize the paste slightly. Add the garlic, oregano, chili flakes and lemon zest, stirring , until garlic is fragrant, about 30 seconds. Add the chicken stock to deglaze the pan. Add the chopped basil and spinach leaves, allowing them to wilt in the sauce.
  • Pour in the heavy cream and bring to a gentle simmer. Add parmesan cheese and stir until melted and sauce thickens. Add dijon mustard, stirring to combine.
  • Return chicken to the skillet, spooning the sauce over the pieces. Let simmer gently for 5 minutes, allowing the chicken to finish cooking and absorb the flavors of the sauce.
  • Serve over pasta, rice or potatoes.
