Pam’s Peanut Butter Cookies

Who doesn’t love a great peanut butter cookie that has crunchy edges and a soft interior? These cookies are great, because they are not overly sweet, but have a great peanut butter flavor.

TIPS: Watch these as they bake as you do not want to over cook them. If you do, they will be crunchy instead of soft cookies. Once they start browning on the edges and the center puffs up, take them out as they will continue cooking on the cookie sheets. Of course these cookies will crisp up in the days following the day you bake them, and not be as soft, but are still delicious.

Pam’s Peanut Butter Cookies

Ingredients
  

  • 1 1/2 C + 2 Tbsp all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 C butter (1 stick) at room temperature
  • 1/2 C + 2 Tbsp creamy peanut butter
  • 1/2 C + 1 tsp white sugar
  • 1/2 C + 1 tsp brown sugar lightly packed
  • 1/2 tsp vanilla extract
  • 1 large egg at room temperature

Instructions
 

  • Sift the flour, baking soda and salt in a small bowl and set aside.
  • Using a hand mixer on medium speed, cream the butter, peanut butter, both sugars and the vanilla in a medium bowl until fluffy, about 1 1/2 minutes. Stop twice while mixing to scrape the bowl with a rubber spatula.
  • Add the egg and beat on medium speed until blended about 1 minute. Scrape the bowl with the spatula.
  • Add the dry ingredients and mix on low speed until blended, about 15 seconds then scrape the bowl and mix a few seconds more.
  • Place the dough in a small covered bowl and refrigerate at least one hour, but can be as long as overnight.
  • Preheat the oven to 350 degrees. Line cookie sheets with parchment paper.
  • Measure out heaping tablespoonfuls of the dough and roll then into balls with your hands. Place the balls 2 inches apart on the baking sheets. Press the dough balls down just slightly with the prongs of a fork.
  • Bake until cookies are dark gold around the edges and slightly puffy and light in the center, about 15 minutes. Do not overcook or they will be crunchy. Remove the cookie sheet and allow the cookies to cool on the baking sheets.
