Salisbury Steak

I have tried many recipes for Salisbury Steak but this recent one won over my husband, as he said to was the best one he’s ever had. It’s typically served over egg noodles or mashed potatoes, topped with the tasty gravy.

TIPS: The patties finish cooking in the sauce so do not try to finish cooking them through while browning or they will likely burn on the outside. If you prefer bigger patties, add more ground beef and up the ingredients the same percentage, and form into four larger patties. The patties can be made ahead and refrigerated for hours. If you do not prefer a stronger Worcestershire taste, back down the Worcestershire sauce on the gravy to a 1/2 tsp.

Ingredients
  

Meat Mixture:

  • 1 lb lean ground beef
  • 1/4 C minced or grated onion
  • 1/3 C breadcrumbs soaked in 1/4 C milk
  • 1 large egg
  • 2 tsp ketchup
  • 1 tsp dijon mustard
  • 1 tsp kosher salt
  • dash Worcestershire sauce
  • 2 Tbsp olive oil

Gravy

  • 1/2 C thinly sliced onion
  • 8 oz sliced white mushrooms
  • 1 tsp minced garlic
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 2 C low sodium beef broth or stock
  • 1 tsp dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 Tbsp ketchup (optional)
  • salt and pepper

Instructions
 

  • Place the ground beef in a large bowl. Mix in all the ingredients, except the olive oil. Form into 4 patties about 3/4 inch thick.
  • In a large skillet heat olive oil over medium-high heat. Brown the meat patties on each side for about 3-4 minutes until well browned, but not cooked through. (They will finish cooking in the sauce). Remove to a plate and set aside.
  • In the same pan over medium heat add the onions and cook 3-4 minutes until they start to soften. Add in the mushrooms and cook until they are golden brown. Add more oil if needed. Stir in the garlic and cook 30 seconds until fragrant. Add the butter to the pan and melt it. Sprinkle flour on top, stir in and cook for 1 minute. Slowly whisk in the beef broth. Add the ketchup, dijon, and Worcestershire sauce. Continue cooking for about 5 minutes until sauce starts to thicken. Taste and add salt and pepper as needed.
  • Add the patties back to the pan into the gravy and heat on both sides until patties are cooked through.
  • Serve patties topped with sauce over egg noodles, mashed potatoes or rice if desired.
