Roasted Salmon with Dijon-Dill Sauce

This is such a delicious and simple way to cook salmon. It tales very little prep time and can be made with ingredients you probably have at home. It creates a moist and flavorful fish that everyone will enjoy!

TIPS: You can prep this ahead of time and pull out of the fridge when you are ready to bake. Just keep it covered in the fridge, up to 4 hours ahead. You can easily replace the salmon with other thicker, sturdier fish filets, such as fresh cod or sea bass. This is a carb-free dish so its perfect if you are trying to watch your carbohydrates or sugar.

Roasted Salmon with Dijon Dill Sauce

Ingredients
  

  • 3 Tbsp greek yogurt or sour cream
  • 1 1/2 Tbsp mayonnaise
  • 1 1/2 Tbsp dijon mustard
  • 2 Tbsp chopped fresh dill, or 1/2 tsp dried
  • 2 tsp fresh lemon juice
  • 1 garlic clove minced
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 4- 6 oz salmon filets (or sturdy white fish, such as sea bass or cod) (skinless)

Instructions
 

  • Preheat oven to 425 degrees, or 400 convection.
  • Combine all the ingredients except the fish in a small bowl and mix well. Place fish with skinned-side down on a foil lined baking sheet sprayed with cooking spray. Spread yogurt mixture evenly over the tops all 4 filets.
  • Bake for 10 – 15 minutes, depending on the thickness of your fish. Cook until it easily flakes, or internal temperature is 110-120. Do not overcook. Remove from oven and let rest 5 minutes. Top with fresh dill if desired.
