Roasted Salmon with Dijon Dill Sauce

Ingredients
  

  • 3 Tbsp greek yogurt or sour cream
  • 1 1/2 Tbsp mayonnaise
  • 1 1/2 Tbsp dijon mustard
  • 2 Tbsp chopped fresh dill, or 1/2 tsp dried
  • 2 tsp fresh lemon juice
  • 1 garlic clove minced
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 4- 6 oz salmon filets (or sturdy white fish, such as sea bass or cod) (skinless)

Instructions
 

  • Preheat oven to 425 degrees, or 400 convection.
  • Combine all the ingredients except the fish in a small bowl and mix well. Place fish with skinned-side down on a foil lined baking sheet sprayed with cooking spray. Spread yogurt mixture evenly over the tops all 4 filets.
  • Bake for 10 - 15 minutes, depending on the thickness of your fish. Cook until it easily flakes, or internal temperature is 110-120. Do not overcook. Remove from oven and let rest 5 minutes. Top with fresh dill if desired.
