Apple Strudel

This is a simple apple strudel recipe that can be prepared in no-time, and makes a delicious dessert. It uses frozen puff pastry which makes it easy.

TIPS: Feel free to substitute the apples for other varieties, you may just have to adjust the sugar accordingly, as some apples are sweeter than others. You could also use dried cranberries in place of the raisins for a nice holiday dessert.

Ingredients
  

  • 1 sheet puff pastry thawed but still cold
  • 3 granny smith apples
  • 2 Tbsp butter
  • 2 Tbsp granulated sugar (plus extra for sprinkling)
  • 3 Tbsp brown sugar
  • 3 tsp cornstarch
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/3 C raisins (optional)
  • 1 egg beaten
  • 1 Tbsp milk

Instructions
 

  • Preheat oven to 425 degrees. Line baking sheet with parchment paper.
  • Peel and core the apples, and slice thinly.
  • Melt butter over low to medium heat in a nonstick skillet. Add all of the apples to the pan along with granulated and brown sugar, cornstarch, cinnamon and allspice.
  • Sauté the apples, stirring occasionally, for about 7-8 minutes, until they are becoming soft and coated with sauce. Add raisins if using, and remove from heat and cool completely.
  • Beat the egg and milk together.
  • Roll out puff pastry to thin it out a bit, into a rectangle shape. Pour the apple mixture lenghtwise down the center of the rectangle, covering 1/3 width of the puff pastry, leaving a 1 inch border at the top and bottom. Fold the top and bottom 1 inch border up and over the apples. Next brush the far edges of the puff pastry with the egg/milk mixture and fold them across the apples, overlapping the edges over the apples and sealing the top seam down with egg wash (like making a packet). Make sure all seams are sealed on top and sides. Turn the strudel over and place seam side down on the baking sheet.
  • Slice 4-5 slits in the top of the puff pastry to allow steam to escape. Brush the mixture with the egg wash and sprinkle with sugar. Bake for 25 minutes until puff pastry is golden and flaky. Allow to cool for 20 minutes before slicing .
  • Optional – Drizzle with white icing after it is completely cool: Whisk together 1 cup icing sugar with 1-2 Tbsp milk or until desired consistency to drizzle on the strudel .
    Optional – Serve with vanilla ice cream on the side.
