This is a simple recipe I came across when I was trying to find a different way to make green beans, as vegetables can get so boring. This recipe does not take long and adds a nice flavor to what used to be just plain boiled or sautéed green beans. The tang from the vinegar and sweetness from the honey work well together.
TIPS: You might be tempted to skip the blanching process, however if you want your beans to stay a brighter green you will need to do this step. Keep an eye on your minced garlic in step two, to be sure it doesn’t burn and get bitter.
Honey Balsamic Green Beans
Ingredients
- 1 lb fresh green beans trimmed (16 oz)
- 1 Tbsp olive oil
- 1 garlic clove minced
- 1 Tbsp balsamic vinegar
- 1 tsp honey
- 3/4 tsp onion powder
- kosher salt and pepper
Instructions
- Bring a large pot of water to a boil. Make a large bowl of ice water. Blanch the beans for 2 minutes, then remove them with a slotted spoon and place them to a bowl of ice water to stop the cooking process. Drain.
- In a large saucepan heat the olive oil over medium heat. Add the green beans. Cover and cook for 10 minutes, stirring occasionally, and adding the minced garlic after 5 minutes. Uncover, then stir in the vinegar, honey, and garlic powder. Add salt and pepper to taste. Continue cooking uncovered stirring occasionally until desired level of doneness, about 3-5 minutes more.
