Lexington NC Style BBQ Sauce

This is a thin, vinegar-based BBQ sauce like the ones used all across the South, especially in North Carolina, on smoked pork barbecue. It is vinegary, and slightly spicy, and is perfect poured over shredded roasted or smoked pork butt, on a bun with coleslaw. It is also great on smoked or grilled ribs. It’s easy to whisk together and requires no cooking. Feel free to make ahead of time. This makes a lot so you can also half the recipe.

Lexington NC Style BBQ Sauce

Prep Time 10 minutes

Ingredients
  

  • 1 C water
  • 1 1/2 C cider vinegar
  • 1/2 C ketchup
  • 1 Tbsp white granulated sugar
  • 3/4 tsp kosher salt
  • 1/2 tsp pepper
  • 3/4 tsp red pepper flakes

Instructions
 

  • Whisk all ingredients together in a measuring cup or medium bowl until sugar and salt are dissolved. Taste and add more red pepper flakes if you refer more spice.
