This recipe is so simple and I cannot believe how good it tastes. Pork chops are seared in a skillet and adding just some cream and blue cheese make a great sauce for the pork. Even if you are not a blue cheese lover, you will still enjoy this sauce. I think it would also work with chicken cutlets instead of pork, and be just as good.
TIPS: I prefer not using a non-stick skillet here as you will get much better browned bits left in the bottom of the pan which really helps flavor the sauce. This all cooks up quickly so have your ingredients ready. You could easily substitute pork tenderloin medallions or pork loin here, I just like the boneless pork chops as they are fattier and more flavorful. Do not use boneless ribs or pork shoulder/butt as they need hours to cook to tenderize.
Pork in Blue Cheese Sauce
Ingredients
- 4 boneless pork chops 1/2 inch thick
- 2 tsp Montreal steak seasoning
- 2 Tbsp butter
- 1/2 C heavy cream
- 1/4 C crumbled blue cheese
- minced fresh parsley
Instructions
- If the pork is thicker than a 1/2 inch, pound them until they are the right thickness. Pat the pork dry and sprinkle with steak seasoning on both sides.
- Heat butter over medium heat in a large skillet (preferably NOT non-stick). Add pork chops and cook undisturbed 3-4 minutes on one side until they brown. Turn and cook the other side 3-4 minutes until pork is almost cooked through (but not totally cooked yet). Remove pork to a plate but do not clean out skillet.
- Add the cream to the hot skillet and bring to a simmer, scraping browned bits up from bottom of the pan. Cook over low heat until slightly thickened, about 2-3 minutes. Add blue cheese and stir until fully melted. Taste sauce and season with salt and pepper. Add pork back in and simmer on low 2-4 minutes, turning pork occasionally until fully cooked through. Serve pork with sauce spooned over top, and top with fresh parsley.
