If the pork is thicker than a 1/2 inch, pound them until they are the right thickness. Pat the pork dry and sprinkle with steak seasoning on both sides.
Heat butter over medium heat in a large skillet (preferably NOT non-stick). Add pork chops and cook undisturbed 3-4 minutes on one side until they brown. Turn and cook the other side 3-4 minutes until pork is almost cooked through (but not totally cooked yet). Remove pork to a plate but do not clean out skillet.
Add the cream to the hot skillet and bring to a simmer, scraping browned bits up from bottom of the pan. Cook over low heat until slightly thickened, about 2-3 minutes. Add blue cheese and stir until fully melted. Taste sauce and season with salt and pepper. Add pork back in and simmer on low 2-4 minutes, turning pork occasionally until fully cooked through. Serve pork with sauce spooned over top, and top with fresh parsley.
