Roasted Parmesan Potato Slices

These potatoes are quick to make and are very flavorful and satisfying. They pair well with any meat dish, particularly pork or beef. The parmesan gives these potatoes a yummy crispy coating as they bake.

TIPS: As always, freshly grated parmesan works best here. Do not line the baking sheet with anything as you want the crispy crust to form on the hot sheet covered with cooking spray.

Roasted Parmesan Potato Slices

Ingredients
  

  • 4 Tbsp butter melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 6 Tbsp grated parmesan cheese
  • 2 lbs russet potatoes (about 4 medium) cut into 1/4 inch thick slices
  • chopped parsley (optional)

Instructions
 

  • Preheat oven to 450 degrees (425 convection). Spray a large baking sheet with cooking spray.
  • In a large bowl mix together melted butter, garlic powder, onion powder, paprika, salt and pepper, along with half of the parmesan. Add the sliced potatoes to the bowl and with a rubber spatula toss the potatoes with the butter mixture until well coated.
  • Spread the potatoes in a single layer on the baking sheet, not touching. Sprinkle the rest of the grated parmesan on top of the potatoes. Bake for 20 – 25 minutes, until tender when pierced with a fork, browned and crispy. Remove from oven and sprinkle with parsley if using. Top with a sprinkle of salt if necessary.
