Sherry Braised Chorizo Appetizer

This is a just a two ingredient appetizer, great for a party, and it is so easy and delicious. It compliments any cheese plate or charcuterie board and adds a bit of spice to the evening. The sweet sherry mixed with the spice of the sausage is a great combination.

TIPS: Be sure to use dried chorizo sausage links in this recipe. Using good quality sherry wine (not sherry vinegar) as this makes big difference in flavor. Remember to make this ahead of time so it can rest in the refrigerator for a few hours. The alcohol will all burn off in the cooking process, so don’t worry about your guests having alcohol if they cannot have it.

Sherry Braised Chorizo

Cook Time 20 minutes
Servings 6 portions

Ingredients
  

  • 8-10 oz dried chorizo sausage link(s)
  • 3/4 C sherry wine

Instructions
 

  • Using a fork, prick the chorizo link(s) in 3 or 4 places.
  • Place chorizo in small saucepan and cover with sherry. Bring a a boil, reduce heat and simmer 15-20 minutes.
  • Transfer chorizo and sherry to a dish, being sure the sausage is sitting down in the sherry. Cover and refrigerate for 6-8 hours.
  • Slice chorizo into 3/4 inch slices and reheat in the sherry just until warmed through.
  • Transfer mixture to a serving dish and serve with toothpicks or a small appetizer fork.
