Tzatziki Sauce

This is one of our all time favorite sauces with grilled chicken! Its a traditional tzatziki sauce that is good with any Greek meal you are making, including with pita bread as a dip, or in a gyro type sandwich with grilled chicken, pork or lamb on pita bread. This also would pair well on the side with lamb meatballs. Add a side of Greek salad and you are good to go.

TIPS: This recipe can be easily doubled for a larger crowd. The amount of lemon juice you use is personal taste. I prefer my tzatziki to have a nice, noticeable lemon flavor, but feel free to add lemon juice to your taste preference. If an English cucumber is not available, you can use a peeled regular cucumber but be sure to scrape out the seeds before grating.

Ingredients:

1/2 C greek yogurt
1/2 C sour cream
1/4 of an English cucumber, peeled, and grated or chopped fine
1/4 C fresh dill chopped or 1/4 tsp dry dill
1 very small clove minced garlic
1-2 Tbsp fresh squeezed lemon juice (to taste)
1/2 tsp salt
pinch of pepper

Pat the grated or finely chopped cucumber with paper towel to remove some the liquid and dry a bit. Mix all ingredients together in a small bowl. Chill, covered, until ready to use. This is best if made at least an hour ahead.
